For the month of March I will be serving up the very best of the Cauliflower. A menu inspired by everyone’s obsession of bloody cauliflower pizza bases and damn banting, I will be showing you there is much more to this wonderful ingredient than another cauliflower mash!
The Cauliflower Menu
Canapes Cauliflower and Parmesan croquettes
Amuse Bouche Cauliflower bhaji, smoked egg mouseline and white onion
Starter Roasted yellow fin tuna, char grilled cauliflower, pickled fennel, cauliflower beignet, pomegranate and coconut
Main Sous Vide pork neck, braised cauliflower, almond, watercress and cauliflower cheese
Dessert Custard tart, nutmeg and cauliflower ice cream
Once again each dish will be paired with the finest South African wines and I can tell you that Black Elephant Vintners (March 20th) and Moreson (March 6th) have been confirmed for March. The dates for the One Ingredient cauliflower menu are;
