November we will be seeing just how much can be done with a summer favourite. Sweetcorn! Most of you only know this delicious vegetable as a side dish at a braai that no one really eats they just put it there because it looks nice. Well on this menu I will be showing you the sweetcorn at its very best from a soup, char grilled, basted and roasted even as a soufflé! Feast your eyes on the sweetcorn menu…

Canapés
Seared squid, roasted corn, chorizo and corn broth.
 
Amuse Bouche
Sweetcorn and tarragon veloute
 
Starter
Poached langoustine tail, Asian style pork belly, char grilled sweetcorn, langoustine foam and cashew crumble
 
Main
Herb crusted springbok, sweetcorn purée, seared courgette, spiced plum fluid gel, and caramelised shallots
 
Dessert
Sweetcorn soufflé, caramel popcorn, raspberry and tarragon
