Beetroot Gazpacho


Serves 4


4 beetroot

2 apples

4 sticks of celery

2 carrots

1 star anise

1 handful of mint


In a juicer, juice all of the ingredients apart from the star anise. Pour the juice into a pot and add the star anise. Reduce the liquid by half. Pour through a fine sieve and chill in the fridge over night. Serve ice cold.
